Lobster Gnocchi with Fresh Spinach and a Truffle Butter Sauce
9 oz gnocchi, cooked
6 oz lobster meat, cooked
4 oz baby spinach
6 oz beurre blanc/butter sauce
4 oz heavy cream
1 oz truffle oil
In a sauté pan over medium high heat and add heavy cream until it reaches a simmer. Slowly spoon and whisk in the buerre blanc/butter sauce and reduce heat to medium low. Once mixed through add the gnocchi, baby spinach, and lobster. Mix together until spinach is wilted about 2-5 minutes.
When serving, spoon the gnocchi mixture into the center of a large pasta bowl or deep plate. Drizzle the truffle oil over and around the pasta and serve.
