This morning Executive Chef Paul Lynch from FireLake Grill House shared his recipe for Spicy Apricot Fire Wings.

Spicy Apricot Fire Wings
For glaze:
1/2 bunch of parsley
1/16 pd chives
3 poblano peppers
1 shallot
2 garlic cloves
3 tbspn crushed red pepper
1 tbspn salt
1 tbspn pepper
1 tbspn cayenne
3 cups apricot preserves
For wings:
5 Smoked/Grilled Chicken Wings
2 ounces spicy apricot glaze
1 tablespoon scallions, cut on bias
For glaze:
Rough chop first 6 ingredients and place in mixing bowl. Mix in apricot preserves with spices. Puree all ingredients together in high speed blender 1/3 at a time until completely smooth.
For Wings:
Grill wings to heat thru, and crisp skin. Toss with 2 ounces of Apricot Sticky Glaze. Serve on iron plate with garnish with scallions.
