TOSTONES CON CAMARONES sauteed shrimp in a chipotle tomatilo sauce, served with papaya chutney
- 8 large shrimp cleaned and deveined - 1 plantain - 2 T butter -1 t chopped garlic - juice of 1 lime - 1 T ground chipotle - 2 oz white wine - 2 oz tomatillo sauce salt and pepper
PAPAYA CHUTNEY
-1/4 of a papaya -1/4 of a pineapple -1/2 red onion -1/2 bunch of cilantro -2 jalapenos chopped -juice of a lime -salt and black pepper

Peel and cut plantain in 8 pieces,heat a saute pan add 2 T of butter, add plantains turning them so they ar brown on both sides, set plantains on a cutting board and flatten them, return them to the pan for another minute, take them out and arrange them on a plate. heat another saute pan, add 2 T of butter, shrimp, garlic,and salt and pepper, when shrimp turn color add juice of 1/2 a lime, wine, chipotle and tomatillo sauce.arrange shrimp on top of each " toston" fried plantain, serve with papaya chutney
Papaya Chutney Instructions:
In a mixing bowl add diced papaya, diced pineapple, diced onion, chopped cilantro, lime juice, jalapeno, salt and pepper. toss and taste add salt or pepper as nedded.
