"MN Vikings" Cedar Planked Halibut with Horseradish Crust

3X6X1/2 inch cedar plank
1 oz. corn oil
3 5 oz. Halibut filets
Salt and Pepper
Zest and juice of one orange
1 1/2 Tbsp. Horseradish
4 oz. Butter
1 3/4 oz. chopped dill
1 3/4 oz. Breadcrumbs

Preparation
Soak the cedar planks on water for atleast 2 hours before proceeding.
Remove planks from water and brush with corn oil.
Cooking:
Season halibut with salt and pepper and place each on cedar plank.
Mix the orange juice, orange zest, horseradish, butter, dill, and breadcrumbs together with the paddle attachment of a mixer. When thoroughly combined, remove from the mixer. Spread approximately 2 ounces of the mixture on each halibut filet.
Bake the filets for approximately 10-15 minutes in a preheated 350 degree oven or until they are done and reach a minimum internal temp of 145 degrees.
