Ahi Tuna

| | Preparation | For the Tuna:
Season the tuna with the salt and pepper. Lay the slices of Prosciutto on the counter in front of you and top with the sage leaves. Lay the tuna on the Prosciutto slices and roll the Prosciutto around the tuna. Allow the tuna to come to room temperature before cooking. Heat the olive oil in a sauté pan over high heat and sear the tuna for about I minute on each side. Remove from the pan and keep warm while you make the broth.
